But a crucial step washis time at the Antico Cafè,an iconic bistro of a past Cagliari, which contributed to the evolution of the cuisine of Cagliari and Campidano origin , combining both seaand land and blending perfectly with other traditions.
The desire to grow led him to discover other realities , from Turin to Rome, passingthrough Milan . With a piece of Sardinian heart,he created impeccable
flavour combinations waiting to be discovered.
The real turning point came with the encounter with Chef Roberto Chergia,who inspired Pietro to enhancelocal specialties and provide structure to eachproduct .
The rest is recent history, marked by continuous evolution and great passion, which is reflected in the menu and every
single dish that arrives at the table.
